I’m gonna make some of this soon. I’ve never cooked any part of a pumpkin except the seeds so it was cool to learn that there’s a certain kind for cooking (duh!) and also to peel it (2 x duh!)… I never would have figured that out.
Thanks for the vegan tips too. I’m going to try to make a cashew cream and I’ll let you know how that works.
